Herby Lemon & Garlic Oven Baked Cod
The intense flavor of the cod blends perfectly with the lemon and herbal seasonings, and served with a heaping side of steamed vegetables, this is a hearty yet healthy meal. It’s pretty easy to prepare, and perfect whether for a weeknight dinner or to impress guests.
Ingredients
- 4 cod fillets
- 4 tbls of olive oil
- Salt and freshly ground black pepper, to taste
- 2 lemons, one juiced and one sliced
- 4 cloves of garlic, minced
- 1 tablespoon of fresh rosemary, finely chopped
- 1 tablespoon of fresh thyme, finely chopped
- Parsley, for garnishing

Preheat your oven to 400°F (200°C), positioning the rack in the middle. My advice here is to always try to position your fish in the center of the oven for even cooking.
Place the cod fillets in a baking dish and drizzle with two tablespoons of olive oil. Evenly season the fillets with salt, pepper, minced garlic, rosemary, and thyme— it’s essential not to skimp on the seasoning as it gives the dish a boosting flavor. Pour the freshly squeezed lemon juice over the fillets, ensuring they are evenly coated for maximum flavor absorption.
Place the lemon slices on top of the fillets. This step uplifts the taste by subtly infusing it in the fish plus adds a visually appealing touch to the dish. Drizzle the remaining olive oil over the slices.
Bake the cod in the preheated oven for about 12-15 minutes. The cooking time may vary slightly depending on the thickness of the fillets. I usually check at about 10 minutes, and it's done when it flakes easily with a fork but is still moist.
Take the dish out of the oven and leave it to rest for a few minutes, this allows the flavors to settle in. Sprinkle with chopped parsley for added color and fresh taste, then it’s ready to serve.
