Ingredients
- 1⁄2 sliced red onion
- rice vinegar
- 1⁄2 Cup jasmine rice
- Cooking oil
- 2 sliced shallots
- 1 birdseye chilli
- minced
- 2 lb ground chicken
- salt
- Coconut Cashew Sauce
- 1 Cup frozen cooked edamame
- a bunch basil leaves
- 5 sprigs fresh mint
- 1 chopped butter lettuce
- 3 sliced watermelon radishes
- 1 chopped English cucumber

Directions
Cover the sliced onion in rice vinegar and set aside

Heat a large pan over low heat and toast the rice, stirring often, for about 15 minutes and let it cool. Then use a mortar and grind them into a powder. Set aside.

In a frying pan add a dash of oil. Add the shallots and the chilli, and cook for a few minutes.
