Healthy cookies to lose weight gluten-free

These cookies are my absolute favorite when it comes to healthy snacks. Not only are they super tasty, they are also low in calories, vegan and gluten-free. I discovered this recipe a few years ago when I was looking for healthy alternatives to my usual snacks - I've been baking them ever since. They are perfect to take with you or as a small snack between meals.

1. Step

To bake the healthy cookies recipe, preheat the oven to 180 degrees and line a baking tray with baking paper. This prevents the cookies from burning on the underside - a useful tip I've learned over the years.

2. Step

In a large bowl, mix together the rolled oats, spelt flour, baking powder and salt.

3. Step

Mash the bananas well in a separate bowl. A little patience is required here so that no large pieces are left over.

4. Step

Add the maple syrup and vanilla extract to the mashed bananas and mix well.

Pour the banana mixture into the bowl with the dry ingredients and mix well. Finally, fold in the raisins. I noticed that the batter looks a little dry at first, but don't worry, this is normal.

6. Step

Use a tablespoon to portion the dough onto the baking tray and shape into cookies. The dough should be enough for about 20 cookies.

7. Step

Bake the cookies in the preheated oven for about 15 minutes until they are golden brown.

8. Step

Remove the cookies from the oven and leave to cool on the baking tray. They will still be a little soft at first, but will firm up as they cool.

Enjoy these healthy cookies as a snack or for breakfast. They will keep for about a week in an airtight container. They also freeze well! I always have a few in my freezer so I always have a healthy snack on hand.
