Healthy Christmas Wreath Salad
This super fresh and vibrant salad is not only visually appealing with its festive colors, but also incredibly healthy and delicious.
Ingredients
- 1 large cucumber
- 1 large red bell pepper
- 1 large green bell pepper
- 1 medium sized red onion
- 100 g cherries tomatoes
- A bunch of fresh basil leaves
- A bunch of fresh parsley leaves
- 1⁄2 Cup walnuts, roughly chopped
- 100 g feta cheese, crumbled
- Salt and pepper, to taste
- 2 tablespoon olive oil
- 1 tablespoon Lemon or Lime juice

Start this festive wreath salad by preparing the veggies. Make sure to use the freshest ones as this will reflect on your salad's taste and texture.
Slice the cucumber, red and green bell peppers, and red onion into thin strips. Be sure to keep the stripes same-sized – it renders a meticulous look and makes eating with a fork much easier.
Arrange the sliced cucumber around the edge of a large circular serving plate to form the \wreath\ I prefer using a transparent glass dish as it enhances the vibrant colors and festive look of the salad.
Fill the inside of the cucumber circle with strips of red and green bell peppers, creating a contrast of colors that echoes the Christmas spirit.
Sprinkle chopped red onions, half of the cherry tomatoes, and parsley leaves over the bell or sweet peppers. Do not hesitate to mix the ingredients as this will intensify flavors.
Add the crumbled feta cheese and walnuts on top. The combination of these two creates a delightful blend of crunchiness and creaminess.
Garnish the salad with the remaining cherry tomatoes and basil leaves placed around the edge of the plate, just like decorations on a Christmas wreath.
