Grilled Chicken and Halloumi Burgers
The best part about this recipe is its versatility – it’s perfect for cookouts, dinner parties or just a simple family meal.
Ingredients
- 400 gms of ground chicken
- 200 gms of halloumi cheese
- 1 large onion, finely diced
- 1 large Egg
- 1 Cup breadcrumbs
- 2 cloves of garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- salt and black pepper to taste
- 4 burger buns
- Condiments and vegetables for serving (lettuce, tomato mayonnaise ketchup etc.)

Start by heating the olive oil in a skillet over medium heat. Add the diced onions and minced garlic. I strongly recommend not skipping this step as sautéing these first not only ensures the flavors meld better but also gets rid of the raw taste.
In a large bowl, add the ground chicken. Once your onions and garlic are translucent, add them to the bowl.
Incorporate the egg, bread crumbs, dried oregano, salt, and pepper into the mixture. Use your hands to mix all the ingredients properly. Try not to over mix though, as this can make the burgers tough.
Divide the mixture into four even parts and shape into patties. It's better to make the patties slightly larger as they will shrink while cooking.
Slice the halloumi into four even portions.
Preheat your grill or pan over medium heat. Grill the chicken patties for about 5-7 minutes each side, or until fully cooked. To ensure your patties remain moist, avoid pressing down on them while grilling.
In the meantime, grill the halloumi cheese until it has a nice, golden-brown color. It's advised to keep an eye on it as halloumi can burn quite quickly.
As the patties and halloumi are being grilled, toast the burger buns lightly.
Now, assemble your burgers. Put a patty on the bottom half of each bun, layer with grilled halloumi, and add your favorite condiments and vegetables.
Finally, serve the burgers immediately, while the cheese is still melty and the chicken warm.
