1. Step

Make the Gnocchi: In a large mixing bowl, mash the boiled potatoes. Add the egg yolk and mix well. Add the flour, salt, and black pepper and mix until the dough forms. On a lightly floured surface, knead the dough for a few minutes smooth. Divide the dough into 4 portions and roll each portion into a long rope shape. Cut the rope into 1-inch pieces. Using a fork, each piece gently to form ridges on one side. Set aside the gnocchi.

2. Step

Make the Tomato Sauce: In a large saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent. Add the minced garlic and sauté for a minute. Add the crushed tomatoes, dried oregano, dried basil, salt, and black pepper. Bring the sauce to a boil and then reduce the heat to low. Let the sauce simmer for 10-15 minutes, stirring occasionally.

3. Step

Cook the Gnocchi: Bring a pot of salted water to a boil. Drop the gnocchi into the boiling water in batches. Cook 2-3 minutes or until the gnocchi rise to the surface. Remove the cooked gnocchi with a slotted spoon and transfer to a serving platter.

Serve: Pour the tomato sauce over the gnocchi. Sprinkle grated parmesan cheese and fresh basil leaves on top. Serve hot.
