Fluffy Scottish Pikelet Pancakes
Pikelets are delicious and fluffy small pancakes that make for a perfect breakfast or snack. They are quick and require only simple ingredients that you probably already have. Serve them warm with your favorite toppings, such as butter, syrup, or fresh fruit.
Ingredients
- 1 Cup All Purpose Flour
- 1 tablespoon crystal sugar
- 1 teaspoon baking powder
- pinch of salt
- 1 Cup buttermilk
- 1 large egg
- 1 tablespoon melted butter
- Cooking spray for greasing
- Maple syrup honey or your favorite topping
- 1⁄2 teaspoon baking soda

In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.
Make a well in the center of the dry ingredients and pour in the buttermilk, egg, and melted butter. Mix until you have a smooth batter. Avoid overmixing; some lumps are okay.
Heat a non-stick frying pan or griddle over medium heat. Lightly grease the surface with butter or cooking spray.
Spoon about 2 tablespoons of the batter per pikelet onto the pan, allowing space for spreading. Cook for about 2 minutes, or until bubbles form on the surface and the edges start to set.
Flip the pikelets gently with a spatula and cook for an additional 2 minutes, or until golden brown and cooked through.
Transfer the cooked pikelets onto a plate and cover with a clean kitchen towel to keep them warm.
Repeat steps 4-6 with the remaining batter, adding more butter or cooking spray as needed.
Serve the warm pikelets with your favorite toppings such as maple syrup, honey, or fresh berries. Enjoy!
