Fluffy Fresh Spinach and Feta Quiche

- 1 premade pie crust
- 1 tablespoon olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 10 ounces fresh spinach
- 4 large eggs
- 1 Cup milk
- 2 ounces feta cheese, crumbled
- 1⁄4 Cup parmesan
- 1⁄2 Cup shredded mozzarella cheese
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon ground black pepper
- 1⁄4 teaspoon nutmeg

Directions
Preheat your oven to 375°F (190°C). Press the pie crust into a 9-inch pie plate.
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté for 4-5 minutes until the onions are translucent and the garlic is fragrant.
Gradually add the spinach and continue to sauté until it wilts. This should take about 5 minutes. Remove from heat and set aside to cool.
In a large bowl, beat the eggs and milk together. Add the feta, Parmesan, mozzarella, salt, pepper, and nutmeg, and stir well to combine.
Once the spinach mixture has cooled slightly, spread it evenly over the bottom of the pie crust. Pour the egg and cheese mixture on top.
Bake the quiche in the preheated oven for 35-45 minutes, until the quiche is set and lightly browned on top.
