Filipino Pancit Pork & Shrimp Noodle Stir-Fry
Pancit is a popular, traditional noodle dish from the Philippines. Simple yet full of Asian tangy flavors, this Filipino delicacy is something you can never miss. The recipe is a wonderful mix of stir-fried noodles, assorted vegetables, chicken or pork and shrimp sautéed in soy sauce and citrus flavor, with garnishing of green onions and lemon wedges.
Ingredients
For Pancit:
- 8 oz Pancit Bihon Noodles
- 1 tablespoon vegetable oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1⁄2 lb Pork, thinly sliced
- 1⁄2 lb shrimp, peeled and deveined
- 2 Carrots, julienned
- 1 Cup Green beans, sliced diagonally
- 2 cups Cabbage, shredded
- 2 cups chicken broth
For Sauce:
- 1⁄4 Cup soy sauce
- juice from one lemon
- Salt & pepper to taste
For Garnishing:
- 2 green onions, chopped
- Fresh Lemon wedges

Directions
Firstly, soak the Pancit Bihon Noodles in warm water until they become soft, then drain and set aside.
Meanwhile, heat the vegetable oil in a large skillet or wok over medium-high heat.
Add the chopped onions and minced garlic to the heated oil and sauté until they are soft and fragrant.
Add the thinly sliced pork to the skillet and cook until it is no longer pink.
Next, add the shrimp and keep cooking until they turn pink.
Add the carrots, green beans, and cabbage to the skillet, and stir-fry until they are soft.
In a separate bowl, combine the soy sauce, lemon juice, salt, and pepper to make the sauce.
Pour the chicken broth into the skillet, and then add the softened noodles, stirring to combine all the ingredients.
Drizzle the sauce over the noodle mix, ensuring everything is evenly coated.
Continue to cook the Pancit over medium heat, stirring occasionally, until the noodles have absorbed most of the broth and are well cooked.
Transfer it to a serving tray or dish, garnishing with green onions and lemon wedges.
