- 1 Cup risoni
- 500 g grated zucchini
- 1⁄2 spoon grated lemon rind
- 250 g grated haloumi
- 4 spring onion
- 1 clove garlic
- 1⁄3 Cup parmesan
- 2 tablespoon parsley
- 4 egg
- 1⁄2 self-rising flour

1. Step
Preheat oven to 180 degrees Celsius.

Cook the risoni. Combine it in a bowl with zucchini, half the haloumi, chopped green onions, crushed garlic, parmesan, chopped parsley, lightly beaten eggs, and flour. Stir well, and season according to taste. Pour into a pan lined with parchment paper. Sprinkle the remaining haloumi on top. Bake for 45 minutes, let cool and serve.
