Easy Slow Cooked Chicken Curry
This Slow Cooked Chicken Curry is a perfect one-pot meal that is packed with flavors. This curry is made with juicy chicken, aromatic spices, and a creamy coconut milk base. It is best paired with rice or naan, making it an ideal meal for any occasion.
Ingredients
- 11⁄2 Pounds boneless chicken thighs, cut into bite-sized pieces
- 1 large onion, diced
- 4 cloves garlic, minced
- 1 a piece ginger, finely grated
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1 teaspoon turmeric powder
- 1 teaspoon garam masala
- 1⁄2 teaspoon cayenne pepper
- 1 can diced tomatoes
- 1⁄2 Cup of chicken broth
- 1 Cup coconut milk
- Salt and pepper, to taste
- 2 tbls vegetable oil
- Fresh cilantro leaves, chopped for garnish

Directions
In a large skillet, heat the oil and add the chicken pieces. Cook the chicken until both sides are browned.
Remove the chicken from the skillet and transfer it into the slow cooker.
In the same skillet, add the onions, garlic, and ginger and cook them until the onions are translucent.
Add the cumin powder, coriander powder, turmeric powder, garam masala, cayenne pepper, and salt. Stir everything well and cook for 1 minute.
Add in the diced tomatoes and chicken broth. Stir everything well and let it simmer for a couple of minutes.
6 Pour the tomato and broth mixture into the slow cooker with the chicken.
Add the coconut milk, stir everything well, and cook for 4 hours on low or 2 hours on high.
Check the seasoning and add more salt, if necessary.
Garnish the dish with freshly chopped cilantro leaves before serving.
