- 200 g Boneless chicken thigh or breast
- 100 g Tenderstem broccoli or broccoli heads
- 200 g Egg or wheat noodles
- 2 cloves garlic
- sweet onion
- 1 red chilli
- 2 tablespoon Oil vegetable
Stir Fry Sauce
- 2 tablespoon oyster sauce
- 1 tablespoon light soy sauce
- 2 spoon dark soy sauce
- 1 tablespoon Rice White vinegar
- 1 spoon sesame oil
Chicken Marinade
- 1 spoon light soy sauce
- 1 spoon sesame oil
- 1⁄4 spoon baking soda
- 1⁄2 spoon maize starch
- 1⁄4 spoon white pepper powder

In a mixing bowl add chicken slices and marinade ingredients, mix well and marinate for 20 minutes.

Slice the garlic, onion and chillies thinly. Cut the tender stem broccoli into small pieces and cut the stem part into half lengthways.

In a small mixing bowl, combine stir-fry sauce ingredients, mix well and set aside.

Heat 2 tbsp of vegetable oil, add garlic and stir for a few seconds, then place the marinated chicken slices. Stir fry for about 2 mins until cooked.

Add onion and tender stem broccoli and sauté for 3 mins until tender. Remove from pan and set aside.

In the same pan, drizzle a teaspoon of oil, add the noodles and pour the stir-fry sauce in. Stir fry for 1 min, then add chilli slices, chicken and broccoli back in. Combine all ingredients and continue to cook for another 2 minutes.
