Place the icing sugar, in a large bowl. Don't forget to sift it.
Add two egg whites. Then, mix it with a spoon.
Add the juice of half a lemon and beat with a mixer at low speed for several minutes. Keep beating until you get a very firm consistency, as less creamy as possible.
Divide the royal icing into a bowl for each colour. Add the colourings and mix well until the colours are uniform. Every time you finish each colour, cover the bowl with cling film.
Transfer the royal icing to disposable piping bags.
With these piping bags, decorate cookies using royal icing to form figures and designs.
Let them dry until they are firm!
