Easy Classic French Madeleine Cookies

Ingredients
- 2 large eggs
- 1⁄2 Cup crystal sugar
- 1 Cup flour
- 1⁄2 teaspoon baking powder
- 0.13 teaspoon salt
- 1⁄2 Cup unsalted butter, melted and cooled
- 1 teaspoon vanilla extract
- Zest of one lemon

Directions
In a bowl, whisk the eggs and granulated sugar until well combined. You can hand whisk for this step.
In a separate bowl, sift together the all-purpose flour, baking powder, and salt. Gradually add to the egg mixture while whisking continuously. If desired add zest for a hint of citrus flavor.
Cover bowl with plastic wrap and refrigerate the batter for at least 1 hour, or overnight if possible.
Preheat the oven to 375°F (190°C). Grease a madeleine baking tray with butter or non-stick cooking spray. Spoon the batter into the molds, filling each one about 3/4 full.
Place the filled pan in the preheated oven and bake for approximately 10-12 minutes, or until madeleines are golden brown.
Let cool for a few minutes in the mold, then take out and let cool completely. Enjoy!
