Easy Authentic Slow Cooked Beef Curry
Slow-cooked beef curry is a hearty and satisfying dish bursting with rich aromatic flavors. The beef is cooked low and slow with an array of spices, vegetables, and coconut milk to a nourishing meal that is perfect for any season.
Ingredients
- 2 Pounds of beef stew meat, cut into bite-sized pieces
- 1 large onion, diced
- 3 cloves garlic, minced
- 1 thumb ginger, grated
- 2 tbls of curry powder
- 1 teaspoon of ground cumin
- 1 teaspoon of turmeric
- 1 teaspoon of paprika
- 1 teaspoon of salt
- 1 teaspoon of black pepper
- 2 tbls of tomato paste
- 1 Cup of beef broth
- 1 can of coconut milk
- 3 carrots, peeled and chopped
- 2 potatoes, peeled and chopped
- 1 red bell pepper, diced
- Fresh cilantro leaves, for serving

Directions
In a large skillet, heat some oil over medium-high heat. Add the beef and cook until browned on all sides. Remove the beef from the skillet and transfer it to a slow cooker.
In the same skillet, add onion and cook until translucent. Add garlic and ginger and cook for an additional minute.
Add all the spices, tomato paste, beef broth, and coconut milk to the skillet. Stir to combine.
Pour the mixture over the beef in the slow cooker. Add the chopped carrots, potatoes, and red bell pepper.
Cook on low for 6-8 hours or high for 3-4 hours, or until the beef is tender and the vegetables are cooked through.
Serve hot over rice or with naan bread. Garnish with fresh cilantro leaves.
