Heat a large skillet pan over medium heat. Add the sliced sausages and cook until brown. Remove the sausages from the pan and set aside.

In the same skillet, add the onion, minced garlic, and grated ginger. Sauté until the onion is translucent and fragrant

Add the chopped tomatoes and cook until they start to soften. Then, add the sliced green bell pepper and continue to cook for a few minutes.

In a small bowl, mix together the curry powder, ground cumin, ground coriander, turmeric powder, and chilli powder. Add this spice mixture to the skillet and stir well to coat the vegetables.

Pour in the coconut milk and bring the mixture to a gentle simmer. Add the browned sausages back to the skillet and stir. Season with salt and pepper to taste.

Cover the skillet and let the curry simmer for about 10-15 minutes, allowing the flavors to meld together and the sausages to absorb curry sauce.
