- 2 tablespoon coarse salt
- 1 teaspoon freshly ground pepper
- 1⁄2 teaspoon garlic powder
- 1⁄4 teaspoon ground cumin
- 1⁄4 teaspoon hot ground paprika
- 3 tablespoon cajun
- 1 tablespoon brown sugar
- 1 fresh apple
- 200 ml apple juice
Barbecue sauce
- Meat juices
- 3 tablespoon tomato sauce
- 2 cloves garlic
- 6 g fresh coriander leaves
- 2 tablespoon white balsamic vinegar
- 1 chili pepper

Add salt, freshly ground pepper, garlic powder, cumin, paprika, cajun and a little brown sugar. Stir and set aside.

Cut the apple into small slices and place the pieces in a baking dish. Add the apple juice.

Season the meat with the seasoning mixture. Then place it on top of the apple base.

Place in a preheated oven at 110° C and cook for 3 hours.

Cover the meat with foil and leave to rest for 30 minutes to allow the meat to settle.

Add the caramelised apple, tomato sauce, garlic, fresh coriander, a dash of white balsamic white wine vinegar, and a dismembered and seeded chilli to the blender.
