Dr. Seuss' Green Eggs and Ham
This playful and delightful recipe pays tribute to a classic Dr. Seuss children's book. It is a fun, colorful, and nutritious way to start the day that your kids will absolutely adore. Not only is it pleasing to the eye, but it also tastes absolutely phenomenal.
Ingredients
- 4 large eggs
- 4 slices of ham
- 1 Cup of fresh spinach
- 1 tablespoon olive oil
- Salt, to taste
- Pepper, to taste
- 2 tablespoon milk
- Green food coloring (optional)

Directions
Start by heating the olive oil in a large frying pan.
Once the oil is heated, add in the ham slices. Cook them until they're well-done or to your preference.
While the ham is cooking, blend the spinach and milk in a blender until it's completely liquefied. If you wish for a deeper color, you can add a few drops of green food coloring.
Break the eggs into a bowl and whisk them until the yolks and whites are combined.
Pour the green spinach mixture into the eggs, and whisk it again until it's well combined. You may wish to add salt and pepper at this stage.
Once the ham is cooked, remove it from the pan and keep it warm.
In the same pan, pour the green egg mixture and scramble it on medium-low heat.
Keep stirring the eggs until they're cooked to your liking.
Once they're done, serve the green eggs with the warm ham.
