Delicious ribs stewed or braised with potatoes
I am a lover of home cooking and comfort food. This recipe for stewed or braised short ribs with potatoes is one of my favorites and I can never resist its juicy, savory flavor. Packed with robust flavors, this recipe is not only comforting, but also rich and very satisfying. I have prepared this dish several times and it has always been a winner with my family and friends.
Ingredients
- 1 kg of pork ribs
- 4 larger potatoes
- 2 Onions
- 4 clove garlic
- 1 red bell pepper
- 1 green bell pepper
- 1 carrot
- 2 tomatoes
- salt to taste
- Pepper to taste
- 1 liter of beef broth
- olive oil
- 2 sheets Laurel
- 1 glass of red wine

Directions
Start by seasoning the pork ribs with salt and pepper. It is important to let the flavors blend well, so it is recommended to do this ahead of time, if possible.
Then, in a pan with a little olive oil, sear the ribs until golden brown. For the best flavor, be sure to brown each side of the ribs well.
Add the chopped onion, garlic, peppers and carrot to the same pan. Cook until soft and golden brown.
Add the peeled and chopped tomatoes, the bay leaves and the red wine. Let it reduce a little before adding the meat stock and the peeled and chopped potatoes.
Finally, lower the heat and let everything cook for a couple of hours. During cooking, check the liquid level from time to time and if necessary, add more broth or water.
Serve hot and enjoy this comforting and flavorful dish.
