Delicious Mango Flan
Mango flan is a delicious blend of tropical and traditional flavors. Its smooth and creamy texture complemented by the vibrant flavor of mango is the perfect dessert for a warm summer afternoon. The recipe is simple, but it's worth it to patiently dedicate yourself to each step, the end result is worth it!
Ingredients
- 1 can Condensed milk
- 1 can Of evaporated milk
- 2 ripe mangoes
- 5 Eggs
- 1⁄2 mug sugar
- Water for water bath

Preheat your oven to 180 degrees Celsius. Here's a little trick: place a tray with water inside the oven during preheating, this helps to maintain a constant humidity and thus the cooking of your flan will be perfect.
Peel and cut the mangoes, removing the seeds. Keep in mind to use only ripe mangoes, as these will give juiciness and much more flavor to the flan.
Add the condensed milk, evaporated milk, chopped mangoes and eggs to a blender. Blend everything together until smooth and free of lumps.
In a saucepan over medium heat, melt the sugar until you get a blond caramel. A tip: do not stop moving the sugar while it melts, this will prevent it from burning and acquiring a bitter taste.
Pour the freshly made caramel into a flan mold and stir to distribute evenly. Then add the mango and milk mixture.
Place the mold in a bain-marie in the oven. The bain-marie is key for the flan to cook evenly and to acquire its characteristic smooth and creamy texture.
Bake for one hour or until a toothpick comes out clean when inserted. Remember that every oven is different, so keep an eye on your flan after 45 minutes of baking so that it does not dry out.
Let cool and refrigerate for at least one hour before serving. Carefully unmold and enjoy!
