Delicious homemade village cookies
This recipe for homemade village cookies is one of my favorites. I have made them numerous times and the taste reminds me a lot of my childhood, when I used to make them with my grandmother in the kitchen of her house in the village. They are delicious, soft on the inside and with a slight crunch on the outside, perfect with a cup of coffee or tea.

Directions
Preheat the oven to 180°C and prepare two baking trays with baking paper. It is important that the oven is hot before placing the cookies in order to obtain a perfect baking.
Beat the butter with the sugar until creamy and smooth. This step is crucial for fluffy cookies.
Add the egg and vanilla essence to the previous mixture. Mix well until fully integrated.
In another bowl, mix the flour, baking powder and salt. Then, gradually add these dry ingredients to the butter and sugar mixture. In this way, you ensure that all the ingredients are mixed homogeneously, avoiding lumps.
Knead the dough to obtain a smooth texture, but do not over-knead to prevent the cookies from becoming tough.
Form the cookies with your hands or with the help of a mold. I usually make them about 5 cm in diameter but you can make them any size you prefer.
Place the cookies on the prepared trays and bake for 15-20 minutes, until golden brown. Remember to keep an eye on them because each oven is different and they may bake faster.
Let the cookies cool on the tray for a few minutes before transferring them to a wire rack. This will prevent them from breaking.
When they are completely cool, you can sprinkle them with powdered sugar if desired.
