Crispy spelt cookies
Every baker, whether professional or amateur, knows that experimentation is the key. In my kitchen, I set myself the challenge of creating a sweet cookie made from spelt. My attempt resulted in these deliciously crispy spelt cookies, which go down well on any occasion.
Ingredients
- 200 g spelt flour
- 100 g sugar
- 1 egg
- 100 g softened butter
- 1 TL baking soda
- Zest of one untreated organic lemon
- 1 Pinch salt

For the spelt cookies recipe, start by preheating your oven to 180 degrees. Beginners often make the mistake of skipping this step, but correct preheating is essential for the perfect baking result.
Take a large bowl and add the spelt flour, sugar, baking powder and salt. The dry ingredients should always be mixed first. Next, add the softened butter and the egg.
Stir the ingredients together first with a spoon and then with your hands to form a smooth dough. Tip: Place the dough in the fridge for around 30 minutes so that it is easier to work with later.
Once the dough has cooled, form walnut-sized balls and place them on a baking tray lined with baking paper. As an experienced baker, I flatten the balls with the underside of a glass to get nice even cookies.
Bake the spelt cookies in the preheated oven for about 12-15 minutes until golden brown. Leave the cookies to cool completely on a wire rack before enjoying them. You will notice that they become slightly harder as they cool.
