Crispy Rainbow Beef & Vegetables Stir-Fry
Rainbow beef is a flavorful celebration of colors and textures, combining vibrant vegetables and tender beef in a sweet, savory and slightly spicy sauce. Surprisingly easy to make, this dish is perfect for a special family dinner or a festive gathering.
Ingredients
Ingredients:
- 500 gms of beef sirloin, thinly sliced
- 1 medium red bell pepper, cut into thin strips
- 1 medium yellow bell pepper, cut into thin strips
- 1 medium orange bell pepper, cut into thin strips
- 2 medium carrots, cut into thin strips
- 2 spring onions, cut into two inch lengths
- 1 medium onion, thinly sliced
- 2 cloves garlic, minced
- 2 tbls vegetable oil
- salt and pepper to taste
For the sauce:
- 2 tbls soy sauce
- 2 tbls oyster sauce
- 1 tablespoon cornstarch, dissolved in a little water
- 1 teaspoon sugar
- A pinch of red pepper flakes (optional)

Directions
Season the beef with salt and pepper. Set aside for 10-15 minutes.
Prepare the sauce by combining soy sauce, oyster sauce, dissolved cornstarch, sugar, and red pepper flakes. Mix well and set aside.
Heat in a pan over medium heat. Add garlic and onion, sauté until fragrant and slightly brown.
Add the beef and stir-fry until it changes color. Remove from the pan and set aside.
In the same pan, add all the bell peppers and carrots. Stir-fry until vegetables are tender yet crisp.
Return the beef to the pan, add the sauce and stir well to combine. Cook for a few more minutes until the sauce thickens.
Add the spring onions last, stir well to incorporate.
Serve hot with a side of steamed rice or noodles, and enjoy your Rainbow Beef.
