Classic Slow Cooked Beef Roast
This slow cooked beef roast recipe is a classic comfort food that is perfect for chilly winter nights. The tender and juicy beef is cooked to perfection with aromatic herbs and veggies, resulting in a meal bursting with flavor.
Ingredients
- 3 Pounds beef chuck roast
- 1 tablespoon olive oil
- 1 large onion, sliced
- 4 cloves garlic, minced
- 2 large carrots, chopped
- 2 Stems celery, chopped
- 1 Cup beef broth
- 1 tablespoon tomato paste
- 2 twigs Fresh Rosemary
- 2 twigs fresh thyme
- Salt and pepper taste

Directions
Heat the olive oil in a large skillet over medium-high heat. Add in the sliced onions and cook for 2-3 minutes until slightly browned.
Stir in the garlic and cook for another 30 seconds, until fragrant.
Place the sliced vegetables into your slow cooker.
Transfer the onion-garlic mixture on top of the vegetables.
Season the beef roast with salt and pepper, and then sear on both sides in the same skillet until browned.
Transfer the beef to the slow cooker on top of the vegetables and onion mixture.
Add the beef broth, tomato paste, rosemary, and thyme to the slow cooker.
Cook in the slow cooker on low for 8 hours until the meat is tender and falling apart.
Once done, remove the beef roast from slow cooker and let it rest for 10 minutes before slicing.
Serve beef roast with the vegetables and sauce from the slow cooker.
