Classic Chinese Crispy Peking Duck Pancakes

- 1 whole Duck
- 100 gms of Chinese Pancakes
- 3 Green onions (sliced)
- 1 Cucumber (cut into thin strips)
- 4 tbls of Hoisin sauce
- salt and pepper to taste

- 1 tablespoon of Five Spice Powder
- 2 tbls of honey
- 2 tbls of soy sauce
- 1 large piece of Ginger (finely chopped)
- 2 cloves Garlic (crushed)

Directions
Begin by marinating your duck. In a bowl, combine the five spice powder, honey, soy sauce, ginger, and garlic cloves. Mix thoroughly and rub the mixture all over the duck, both inside and out. Let it marinate in the fridge for at least an hour.
Preheat your oven to 180°C (356°F). Place the duck on a roasting rack and roast for about 1 and a half hours. Make sure to baste the duck with the marinade every 15 minutes to get a crispy skin.
After roasting, let the duck rest for about 15 minutes. Then, cut it into thin slices.
To assemble the pancakes, spread a little hoisin sauce on each pancake. Add a few slices of duck, some cucumber strips, and sliced green onions.
To finish, roll the pancakes and serve immediately.
