Christmas Pomegranate Salad
This Christmas Pomegranate Salad makes for a vibrant side to the roast and all the traditional trimmings, adding its special crunch to the festive meal.
Ingredients
- 1⁄2 Cup pomegranate seeds
- 1⁄2 Cup diced red apple
- 1⁄2 Cup diced green apple
- 1⁄4 Cup crumbled feta cheese
- 1⁄4 Cup chopped walnuts
- 2 cups baby spinach leaves
- 0.3 Cup olive oil
- 2 tbls red wine vinegar
- 1 tablespoon With

Directions
Start by preparing the dressing. In a small bowl, whisk together the olive oil, red wine vinegar, honey, salt and pepper to taste. Just a tip from my personal experience: always add the salt and pepper bit by bit, tasting as you go to avoid over-salting. Set the dressing aside.
In a large salad bowl, combine the pomegranate seeds, diced red and green apples, crumbled feta cheese, and chopped walnuts. Toss gently to mix. Now, remember to handle your fruits gently to avoid bruises, particularly the apples.
If you are serving immediately, add the spinach leaves to the bowl. If you are not serving immediately, wait to add the spinach leaves until just before serving to keep them from wilting.
Pour the dressing over the salad and mix well to make sure every leaf is coated. This salad tastes best when allowed to sit in the fridge for about 2 hours, as it helps the ingredients meld together beautifully.
