Christmas Nutella lentil rolls

We make this recipe every year during the Christmas holidays and it is always a hit with our guests. Everyone loves the texture and delicious summer home flavours. I learned the basic recipe from my grandmother and have made it for the family every year since. It's a showy and delicious cake that perfectly sets the Christmas mood.

1. Step

The first step is to sift the flour into a large bowl. It is my personal experience that the dough is always better and softer if you sift the flour first.

2. Step

To the flour add the butter, icing sugar, egg, chopped almonds, salt and lemon zest. Start kneading the dough until it is completely combined. If it feels too sticky, feel free to add a little more flour. And if it is too dry, you can soften it by adding a little butter.

3. Step

Cover the dough and leave it to rest in the fridge for about 30 minutes. This step is useful to increase the firmness of the dough, so it will be easier to work with.

4. Step

Take pieces of dough the size of walnuts, flatten them with your fingers on a floured surface, then cut out the rings.

5. Step

Bake in a preheated oven at 180°C for 10-12 minutes until golden brown. It is important to note that baking at a lower temperature for longer will make the linzer more delicate and crumbly.

6. Step

When the linzers have cooled, spoon a little Nutella between the rings and carefully glue them together.
