Chinese Chicken San Choy Bau Lettuce Wraps
A flavorful dish from the rich culinary world of Chinese cuisine, Chicken San Choy Bau takes advantage of what a typical lettuce can do as it serves as the wrap for a succulent and fabulous chicken filling. Ingredients
- 500 g ground chicken
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 onion, finely chopped
- 1 Carrot, finely chopped
- 1 red bell pepper, finely chopped
- 100 g water chestnuts, finely chopped
- 2 tbls oyster sauce
- 1 tablespoon soy sauce
- 1 tablespoon cornstarch mixed with two tablespoons water
- salt and pepper to taste
- 1 head iceberg lettuce
- Fresh cilantro and spring onion for garnish

Directions
In a large frying pan, heat the olive oil over medium heat. Add the onion and garlic, and sauté until the onion becomes translucent.
Add in the ground chicken and use a spatula to break it up as it cooks. Cook until chicken is fully cooked and no longer pink.
Add the carrot, red bell pepper, and water chestnuts to the pan. Stir well and continue cooking for another 2-3 minutes.
Then add the oyster sauce and soy sauce, stirring well to combine all the flavors together. Add the cornstarch and water mixture to help thicken the sauce. Salt and pepper to taste. Remove from heat and allow to cool slightly.
While the mixture is cooling, carefully separate the lettuce leaves from the head of lettuce.
Spoon the cooled chicken mixture into the middle of a lettuce leaf and garnish with cilantro and spring onion. Repeat with remaining ingredients.
Chicken San Choy Bau is best served immediately. Enjoy this delicate taste of Chinese cuisine!
