Chicken risotto with mushrooms
Crispy chicken, soft mushrooms and creamy risotto - simply irresistible combination.
Ingredients
- 350 g chicken meat
- 200 g mushrooms
- 1 pcs onion
- 2 cloves garlic
- 1 spoon olive oil
- 250 g Rice arborio
- 1 l vegetable broth
- 80 g Parmesan cheese
- Salt, freshly ground black pepper to taste

First, cut the meat into smaller pieces, salt it and fry it in a pan with a little olive oil. Remove the browned meat and set aside.
In the same pan, fry the finely chopped onion and garlic so that they have a beautiful golden colour. Then add the sliced mushrooms.
When all the ingredients in the pan are combined, add the rice. It is very important that you do not pour all the broth at once, but gradually, as the rice absorbs it. Remember to stir occasionally in between.
When the rice is almost done (after about 20 minutes), add the chicken back in and stir. This way all the flavours will meld together and create a perfect harmony.
Finally, add the grated Parmesan cheese to the risotto and stir once more. Then you can serve the risotto.
