Make this authentic Hainanese meal with fried rice and chilli sauce!
Ingredients
Chicken
- 1 whole chicken
- 11⁄2 tablespoon Kosher salt
- 1 a piece ginger
- 2 cloves garlic
- 1 volume rowan
- 2 star anise
- 1 tablespoon sesame oil
Rice
- 1⁄4 teaspoon ground white pepper
- 2 tablespoon vegetable oil
- 2 shallots
- 1 a piece ginger
- 2 cloves garlic
- 2 cups jasmine rice
- 1 tablespoon sesame oil
- 1⁄2 teaspoon Kosher salt

Directions
Trim the chicken, then season with salt and stuff with garlic, star anise, sliced ginger, and scallion. Put in a pot, pour water in till covered, and cook for 20-25 minutes. Rinse the cooked chicken in cold water. Rub sesame oil in.

Add white pepper to the chicken broth, and boil till reduced by half.
Fry chopped shallots in vegetable oil till light brown. Add grated ginger and minced garlic. Saute, then add rice, sesame oil, and salt.

Mix well, then add the reduced chicken broth. Bring to a boil and cook for 15 minutes.

Cut up the chicken. Add to a plate together with rice. Serve with chilli sauce and fresh parsley, and enjoy!
