Best Quick & Easy SweetCorn Fritters
Fritters are a universally adored treat, and this simple recipe for SweetCorn Fritters will not disappoint. Ingredients
- 1 Cup sweet corn kernels
- 1⁄2 Cup all-purpose flour
- 1⁄4 Cup cornflour
- 1⁄4 Cup chopped spring onions
- 2 tbls chopped fresh coriander
- 1⁄2 teaspoon crushed black pepper
- salt to taste
- oil for deep frying

In a mixing bowl, combine the sweet corn kernels, all-purpose flour, cornflour, chopped spring onions, fresh coriander, chilli flakes, crushed black pepper, and salt.
Mix everything together until it forms a batter. If it is too thick, add a little water; if it is too thin, add a little extra flour.
Heat oil in a deep frying pan over medium heat. Once the oil is heated, drop spoonfuls of the batter into it, making sure not to overcrowd the pan.
Fry the fritters until they are golden brown on all sides, which should take about 3-4 minutes. Use a slotted spoon to flip them over partway through.
Once the fritters are done, use the slotted spoon to remove them from the oil, draining any excess on kitchen paper.
Serve your SweetCorn Fritters hot, with a dipping sauce of your choice.
