Directions
Preheat your oven to 180°C (160°C for fan assisted ovens or gas mark 4) and lightly grease a baking dish.
Place the salmon fillets in the dish, sprinkle with salt and pepper, and bake for 15-20 minutes until cooked and easily flaked with a fork.
While the salmon is cooking, prepare the Mornay sauce. In a saucepan, melt the butter over medium heat. Stir in the flour until combined.
Gradually add the milk, whisking continuously until the sauce thickens. Add in the cheese and nutmeg, continuing to stir until the cheese is melted and the sauce is smooth. Season with salt and pepper to taste.
Once the salmon is ready, remove from the oven and flake it with a fork.
Pour the Mornay sauce over the flaked salmon, ensuring it is evenly distributed.
Sprinkle the breadcrumbs over the top of the sauce and return the dish to the oven.
Grill the dish in the oven for about 5-10 minutes or until the breadcrumbs are golden brown and the sauce is bubbling.
Remove from the oven, garnish with chopped parsley, and serve hot.
