Directions
Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
In a large mixing bowl, combine the gluten-free all-purpose flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt. Whisk well to ensure even distribution of ingredients.
Add the vegetable oil, eggs, buttermilk (or non-dairy milk), and vanilla extract to the dry mixture. Mix on low speed for about 2 minutes, or until the batter is smooth and well-blended.
Gradually pour in the boiling water while continuously mixing the batter. The batter will be thin but that's normal.
Pour the batter into the prepared cake pan and smooth the top with a spatula.
Bake in the preheated oven for approximately 30 minutes, or until a toothpick inserted into the center of the cake comes out clean.
Once baked, remove the cake oven and let it cool in the pan for 10 minutes. Then, transfer the cake to a wire rack to cool completely.
Once cooled, frost the gluten-free cake with your favorite icing or dust with powdered sugar before serving.
