Best Ever Creamy Cheesy Chicken Enchiladas
Chicken Enchiladas is a traditional Mexican dish, filled with a flavorful chicken mixture which is tucked into tortillas, and then topped with a rich and creamy cheese sauce. It is a hearty and comforting dish that's perfect for serving on any celebration or a casual weeknight dinner.
Ingredients
- 2 chicken breast fillets
- 1⁄2 Onion (chopped)
- 1 clove garlic (minced)
- salt and pepper to taste
- 2 cups enchilada sauce
- 8 flour tortillas
- 2 cups grated cheese (Mexican blend)
- 1⁄2 Cup fresh cilantro (chopped)
- 2 tbls Cooking oil
- Sour cream and sliced avocado (for garnish)

Directions
Preheat your oven to 375 degrees F (190 degrees C).
In a large skillet, heat the oil over medium-high heat. Add the chicken, season with salt and pepper and sauté until browned and cooked through. Remove the chicken from the pan, set aside to cool, then shred it.
In the same skillet, add the onions and garlic and cook until they are soft and fragrant.
Return the shredded chicken to the skillet, add 1/2 cup of enchilada sauce, and stir until everything is well coated.
Lay the tortillas on a flat surface. Divide the chicken mixture evenly among the tortillas, roll them up tightly, and place them in a baking dish.
Pour the remaining enchilada sauce over the tortillas and sprinkle with grated cheese.
Bake in the preheated oven for about 20 - 25 minutes or until the cheese is melted and bubbly.
Garnish with chopped cilantro, sour cream, and sliced avocado before serving.
