Best Easy Mexican Prawn Tacos

Ingredients
- 500 gms prawns (peeled and deveined)
- 2 tbls olive oil
- 2 cloves garlic (minced)
- 1⁄2 teaspoon Chilli Powder
- 1⁄2 teaspoon cumin
- salt and pepper to taste
- 8 small tortillas
- 2 ripe avocados (sliced)
- 1 Cup of fresh salsa
- 1 lime (cut into wedges)
- Fresh coriander (chopped) to garnish

Heat the olive oil over medium-high heat in a large pan. Add the garlic and sauté until fragrant.
Add the prawns to the pan. Sprinkle the chili powder, cumin, salt, and pepper over the prawns. Stir to coat the prawns in the seasoning and cook until they are pink and cooked through, usually about 5 minutes.
While the prawns are cooking, warm the tortillas in the oven or on a dry hot pan.
Assemble the tacos by placing a few slices of avocado on each warmed tortilla, then add a scoop of prawns. Top it off with fresh salsa, then garnish with fresh coriander.
