Beat the egg whites into a stiff froth. Mix the bananas and yolks with a hand blender. Add melted coconut oil to them. In a bowl, mix all the dry ingredients. Add the banana mixture to the dry ingredients. Finally, fold the egg white foam into the dough. Pour into a loaf tin lined with baking paper. Place a longitudinally cut banana on top. Bake in an oven preheated to 180 degrees for 40 minutes.
