Baked Spinach and Ricotta Sausage Rolls

Ingredients
- 8 puff pastry sheets
- 400 g sausage mince
- 200 g spinach leaves, blanched and well drained
- 200 g ricotta, crumbled
- 1 small onion, finely chopped
- 1 tablespoon olive oil
- 1 tablespoon dried thyme
- 1 egg, beaten
- salt and pepper to taste
- Poppy seeds for garnish

Directions
Preheat the oven to 200C/400F and line a baking tray with parchment paper.
Heat the oil in a pan, add the onion and saute until softened.
In a large bowl, combine the sausage mince, spinach, ricotta, thyme, salt, and pepper.
Add the cooked onion to the bowl and mix well.
Cut each puff pastry sheet in half and spoon an even amount of the sausage mixture onto one side of each piece.
Roll the pastry over the mixture and cut each roll into three pieces.
Place the rolls on the baking tray and brush with beaten egg.
Sprinkle with poppy seeds and bake for 30-35 minutes or until golden brown and cooked through.
