Authentic Japanese Teriyaki Chicken Sushi

Ingredients
- 2 cups sushi rice
- 4 nori (seaweed) sheets
- 2 boneless chicken breasts
- 1 Cup teriyaki sauce
- 1 cucumber, julienned
- 1 carrot, julienned
- 1 avocado, thinly sliced
- 4 tbls sushi vinegar
- Soy sauce for serving
- Pickled ginger for serving
- A rolling mat

Cook sushi rice as per package instructions. Once cooked, let it cool down a bit then mix it with sushi vinegar. Set aside for a while.
While waiting for the sushi rice, season chicken breasts with salt and pepper. Pan fry them until fully cooked then slice into thin pieces. Coat the chicken pieces with Teriyaki sauce.
Place a sheet of nori on a rolling mat. Evenly spread a layer of sushi rice on the nori, leaving an inch space at the top.
Lay the cucumber, carrot, avocado, and Teriyaki sauce coated chicken near to the bottom of the rice.
Roll the sushi tightly using the mat. Repeat the process with the remaining ingredients.
Slice the sushi roll into bite-sized pieces.
Serve Teriyaki Chicken Sushi with soy sauce and pickled ginger.
