Ingredients
- 250 g minced chicken
- 2 chopped shallots
- 10 g chopped mint
- 5 g Chopped coriander
- 5 g chopped chives
- 2 tablespoon uncooked glutinous rice
- 10 dried chillies
- 2 tablespoon Nam pla fish sauce
- 1 lime
- 1⁄2 spoon salt

Directions
Toast the glutinous rice and the dried chillies in a frying pan until well-toasted.
Turn off the heat and leave them to cool, using a pestle and mortar, crush them separately. Set them aside for later.
Heat a little vegetable oil in a frying pan and add the chicken, stirring it and separating it into small pieces.
When it is well separated, add a splash of water and salt, stir well and remove it from the heat.
Now season to taste, add the fish sauce, lime juice, a little chilli and toasted and crushed rice.
Then add the mint, shallots, coriander and chives and mix well. It is now ready to serve. Enjoy!
