- 1 Cup pineapple chunks

- 1 green bell pepper, cut into chunks
- 1 small onion, sliced
- 2 cloves garlic, minced
- 1⁄4 Cup ketchup
- 1⁄4 Cup vinegar
- 1⁄4 Cup soy sauce
- 2 tbls brown sugar
- 2 tbls maize starch
- 2 tbls vegetable oil
- Salt and pepper, to taste
- Green onions, for garnish
- Cooked rice, for serving

Directions
In a small bowl, whisk together ketchup, vinegar, soy sauce, brown sugar, and cornstarch. Set aside.
Heat vegetable oil in a large skillet or wokover medium-high heat. Add the pork slices and stir-fry until cooked through, about 5-6 minutes. Remove the pork from the skillet and set aside.
In the same skillet, add garlic, onion, and bell peppers. Stir-fry for 2-3 minutes or until the vegetables are crisp-tender.
Return the cooked pork to the skillet and add the pineapple chunks.
Pour the prepared sauce over the pork and vegetables. Stir well to coat everything evenly. Cook for another 2-3 minutes until the sauce has thickened.
Season with salt and pepper to taste.
Serve Pork Sweet and Sour over cooked rice and garnish with green onions.
