Authentic Chimichurri Baked Chicken Breasts
This Chimichurri Chicken recipe is a delightful blend of fresh herbs, garlic, vinegar, and oil that adds a pop of vibrant flavor to the baked chicken. Ingredients
- 4 boneless, skinless chicken breasts
- salt and black pepper to taste
- 1 Cup fresh parsley, finely chopped
- 3⁄4 Cup extra-virgin olive oil
- 3 red wine vinegar
- 3 cloves garlic, finely chopped
- 1 teaspoon crushed red pepper flakes
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon ground black pepper

Directions
Preheat your oven to 425°F (220°C) and lightly grease a baking dish.
Season both sides of the chicken breasts with salt and black pepper. Place the chicken in the prepared baking dish.
In a bowl, combine the parsley, olive oil, vinegar, garlic, red pepper flakes, salt and pepper to create the chimichurri sauce. Stir well until all ingredients are well mixed.
Pour half of the chimichurri sauce over the chicken breasts, making sure to coat them evenly.
Bake the chicken in the preheated oven for about 20 minutes, or until it is cooked through and no longer pink in the middle.
Once the chicken is baked, pour the remaining chimichurri sauce over top before serving.
