1. Step

Cook the soba noodles in boiling salted water for 3-4 minutes. Drain. Toss with two tablespoons of sesame oil. Spread them on a tray and put them in the fridge to cool.

2. Step

Peel and grate the ginger and place it in a bowl. Add the finely chopped garlic. Pour in the mirin, soy sauce, lime juice, sambal oelek and the remaining sesame oil. Finely chop a spring onion stalk and add it. Mix the sauce.

3. Step

Take the soba noodles out of the fridge and dip them in the sauce. Add the sesame seeds. Finely chop the other spring onion stalk, add half, and mix.

4. Step

Place a portion of sesame soba on a plate. Garnish with the remaining spring onion stalk. Serve.
