Authentic Asian Cashew Nut Chicken Stir-Fry

Ingredients
For the Chicken:
- 500 gms boneless chicken, cut into cubes
- 1 tablespoon maize starch
- salt and pepper to taste
For the Stir-fry:
- 1 Cup roasted cashews
- 1⁄2 Cup diced carrots
- 1⁄2 Cup bell peppers
- 1⁄2 Cup chopped Onions
- 2 cloves garlic, minced
- 1 tablespoon vegetable oil
For the Sauce:
- 1⁄2 Cup low sodium soy sauce
- 1 tablespoon sugar
- 1 tablespoon cornstarch mixed with one tablespoon water

Start by seasoning the chicken cubes with salt and pepper and then toss them in cornstarch. Ensure all pieces are well coated.
In a large wok or frying pan, heat the vegetable oil. Add the chicken and cook until golden brown and no longer pink in the middle. Remove the chicken and set aside.
In the same pan, add a bit more oil if necessary. Add the onions, garlic, carrots, and bell peppers. Stir-fry till they are crisp-tender.
Meanwhile, in a small bowl, mix together the soy sauce, sugar, and cornstarch-water solution to make the sauce.
