Apple pie with yeast dough
This apple pie with yeast dough is a personal favorite of mine and has been whipped up several times in my kitchen. Fruity, with a slight sweetness and the fragrant warmth of fresh yeast, this dessert is a hit for any occasion.
Ingredients
For the yeast dough:
- 500 g flour
- 20 g yeast
- 75 g sugar
- 200 ml lukewarm milk
- 75 g butter
- 1 Pinch salt
- 2 Eggs
For the filling:
- 5 medium size apple
- juice of half a lemon
- 50 g sugar
- 2 TL cinnamon

For the apple pie with yeast dough recipe, start with the yeast dough. Mix the yeast with the sugar and lukewarm milk in a large bowl. Let it sit for about 10 minutes until bubbles form. This method is called \Proofing\ and helps activate the yeast.
Now add the flour, butter, eggs and a pinch of salt and knead everything into a smooth dough. Coat a bowl with some butter and let the dough rest there for about 1 hour until it doubles in volume.
While the dough rests, prepare the apple filling. Peel and core the apples and cut them into thin slices. Mix the apple slices with lemon juice, sugar and cinnamon. The lemon juice prevents the apples from turning brown and gives the apples a nice tartness.
After an hour, knead the dough again and roll it out on a floured work surface. Place the dough in a butter-lined baking pan, leaving a rim.
Spread the apple filling evenly over the dough. I like the apples to be arranged in a nice pattern, but that's a matter of taste.
Bake the apple pie with yeast dough in a preheated oven at 180°C for about 35-40 minutes, or until the edges are golden brown. A good tip to check if the cake is done is to poke it with a toothpick. If it comes out clean, the cake is done.
