Zucchini-Basil Soup
A refreshing, green soup that beautifully embodies the flavors of zucchini and basil. Ideal for a delicious lunch or light dinner.
Ingredients
- 2 Piece zucchini
- 1 bunch basil
- 1 Piece onion
- 2 Piece cloves of garlic
- 1 l vegetable stock cube
- 2 tbsp olive oil
- 1 TL salt
- 1 TL pepper

Directions
For the zucchini-basil soup, first peel and dice the zucchini, onion, and garlic.
Heat the olive oil in a large pot, sauté the diced onion and garlic in it.
Add the zucchini and fry briefly.
Deglaze with the vegetable broth and bring to a boil.
Pick off the basil leaves, add them to the soup and let everything simmer for 20 minutes.
Puree the soup with a blender until it has the desired consistency. Season with salt and pepper.
Serve the zucchini-basil soup hot with some fresh basil as garnish.
