Yogurt pancakes

These soft and fluffy yogurt pancakes are one of my favorite breakfast recipes, which I would like to share with you.

1. Step

In a large bowl, combine flour, sugar, baking powder and salt. It's always a good idea to sift the dry ingredients to make the pancakes fluffier.

2. Step

In a separate bowl, beat the eggs until fluffy and add the yogurt. Carefully mix, making sure to thoroughly combine the ingredients.

3. Step

Combine the wet and dry ingredients, mixing just until combined. The key here is to move gently so as not to knock the air out of the mixture - this will keep the pancakes light and fluffy.

4. Step

Heat the oil in a large skillet. Using a spoon, spoon the batter into the pan, forming small pancakes. Fry each one for about 2-3 minutes on each side, until they are golden.

Serve hot pancakes with your favorite toppings - I recommend fresh fruit and maple syrup.
