Vegetarian Mushroom Filling Street Tacos

Ingredients
- 500 gms of mushrooms, sliced
- 2 tbls of olive oil
- salt and pepper to taste
- 6 tortillas
- 2 cloves of garlic, minced
- 1 onion, finely chopped
- 1 Bell pepper, finely chopped
- 2 tbls of taco seasoning
- 1 container of salsa
- 1 Cup of grated cheese
- Fresh cilantro leaves and lime wedges for garnish

Heat 1 tablespoon of oil in a large pan over medium heat. Add the chopped onion, minced garlic, and bell pepper. Cook until the onions become translucent.
Add the sliced mushrooms, and cook until they release their liquid and begin to brown, about 8-10 minutes. Add the taco seasoning, and season with salt and pepper. Stir well, ensuring all vegetables are coated with the seasoning.
In a separate pan, heat a little oil and one by one, warm the tortillas until they are lightly golden and pliable.
Assemble the tacos by placing a generous spoonful of the mushroom mix on each tortilla. Drizzle with salsa, sprinkle with cheese, and garnish with fresh cilantro leaves.
Squeeze a little lime juice over each taco for an added zesty flavor. Serve immediately and enjoy!
