Vegetarian Chinese San Choy Bau Lettuce Wraps

- 400 g firm tofu, crumbled
- 2 tbls oil
- 2 cloves garlic, finely chopped
- 1 Cup carrot, finely diced
- 1 Cup mushrooms, finely diced
- 1 Cup red bell pepper, finely diced
- 1 Cup water chestnuts, sliced
- 4 green onions, finely sliced
- 1⁄4 Cup hoisin sauce
- 2 tbls soy sauce
- 2 tbls rice vinegar
- 1 iceberg lettuce, leaves separated carefully

Heat a frying pan over medium-high heat with the oil, then add the crumbled tofu. Stir-fry for around 5 minutes until tofu becomes slightly crispy.
Add the garlic, carrot, bell pepper, mushrooms, water chestnuts, and green onions to the pan. Stir-fry for another 5-7 minutes until vegetables are tender.
Mix in the hoisin sauce, soy sauce, and rice vinegar. Stir well to combine and cook for another 2-3 minutes.
Using a spoon, spoon the tofu and vegetable mixture into each lettuce leaf. Roll the lettuce to enclose them slightly around the tofu mixture.
Serve immediately while still warm and enjoy!
