Traditional Mexican Chilaquiles
Chilaquiles are a classic Mexican breakfast dish made with fried tortilla chips and topped with a flavorful tomato cheese, and a variety of toppings. This easy recipe is to feed a crowd or to enjoy a delicious breakfast at home.
Ingredients
- 12 corn Tortillas
- 1 Cup vegetable oil
- 2 cups tomato
- 1⁄2 onion
- 1 clove garlic, minced
- 1 teaspoon cumin powder
- 1 teaspoon chili powder
- 1⁄4 teaspoon salt
- 1⁄4 teaspoon ground black pepper
- 1 Cup crumbled queso fresco
- 1⁄4 Cup Chopped fresh cilantro
- 4 eggs
- 1 avocado
- 1 lime

Directions
Heat the oil in a large skillet over medium-high heat. Cut the tortillas into quarters and fry them in the oil until crispy and golden brown. Remove from heat and place on paper towels to drain excess oil.
In a separate skillet, sauté the onion and garlic until soft. Add the tomato sauce, cumin, powder, salt, and black pepper. Simmer for 10 minutes, stirring occasionally.
Add the fried tortilla chips to the tomato sauce and stir until coated. Cook for an additional 5 minutes, until the chips are soft.
Top the chilaquiles with crumbled queso fresco, chopped cilantro, and cooked eggs. Serve with sliced avocado, jalapeños, and lime wedges.
