Soak chopped quince in a bowl of water and 1 tbsp lemon juice. Move to a pot, add remaining lemon juice, and bring to a boil. Cook for 30 minutes.

Strain and blend into a smooth mixture. Put in a saucepan, add sugar, and cook for 40 minutes while stirring.

Pour into a baking tray lined with parchment paper. Smooth the surface, cover with plastic wrap, and let dry overnight. Cut into squares, roll in sugar, serve and enjoy!
